Last year at an early morning committee meeting for the Beaux Arts Ball, our hostess Kristen served an unbelievale blueberry coffee cake. She swore it was the easiest thing to whip up and my pal Camille has become a bluberry coffee cake expert. She invited me over this morning and promised this favorite treat..and it did not disappoint.
Blueberry Coffee Cake
2 cups Bisquick
2/3 cups milk
2 tbsp sugar
1/3 cup Bisquick
1/3 cup brown sugar
1/2 tsp cinnamon
2 tbsp butter
Mix together with fork or fingers..the topping can be doubled.
Grease round baking dish.
Pour in batter
Sprinkle box of blueberries (whatever looks like a good amount) on top of batter
Sprinkle topping on top
Put in 375 degree oven for approx. 20 minutes
Today, Camille used Heart Smart Bisquick and you could never taste the difference. Yum!
