One of my favorite gifts this Christmas is the Preppy Cookbook by Christine E. Nunn. It is so funny and filled with great recipes for meals and cocktails.

And…the recipe that will most likely be tested by me asap is the Grilled Cheese Casserole.
Grilled Cheese Casserole
8 Slices American cheese, cut into 2-inch strips
4 or 5 Ripe Tomatoes, such as Jersey beefsteak, cut into 2-inch wedges, no need to be accurate
10 Slices of Pullman or other white bread, cut into 2-inch cubes
3 Tablespoons butter, cut into small cubes
1 Teaspoon salt
1 Teaspoon pepper
Preheat the oven to 350 degrees. Generously butter a 9 x 13-inch Pyrex or similar glass baking dish. In a large bowl, combine the cheese, tomatoes and bread. Lightly press the bread mixture into the casserole, and dot the top with the butter cubes.
Bake for 15 minutes, or until the cheese is melted and starting to turn golden brown. Let rest 5 minutes before serving.
*the author suggests most cheese will work for this recipe, but highly recommends American cheese.
